Emmylou Harris & Dwight Yoakam - GoldenRing
This is a fun song and these two do a pretty good job singing together.

Conway Twitty - Hello Darlin' in Russian
Conway Twitty actually sang this in Russian. My guess is that he had a Russian speaker write out the words phonetically for him, but according to some of the commenters he did a decent job with the song although there is a noticeable accent.
Привет Радость - Privjet Radost
On July 17, 1975, "Hello Darlin'" was played and broadcast to a worldwide audience as part of the Apollo-Soyuz Test Project. Actually, it was a Russian language version of the song. Called "Privet Radost," the song - commissioned by the Apollo crew - was played by the American astronauts to Russian cosmonauts (of the Soyuz crew) as "a gesture of goodwill." Twitty worked with a language professor from the University of Oklahoma to record the phonetic Russian version of the song.

Ring of Fire - Johnny Cash
This song was actually written by Cash's second wife and a guy named Merle Kilgore. The mariachi horns were Cash's idea though. The song hit number one on the country music chart in 1963.

Johnny Cash - I Walk the Line
This classic was released in 1956. It was Cash's first number one hit. Rolling Stone Magazine ranked it at number 30 in the top 500 greatest songs of all time and it is ranked as the number one greatest country song of all time.

Sesame Street: Johnny Cash Sings Nasty Dan
I don't think this got very high on any of the music charts, but it's a cute song and I love this Sesame Street skit!

DOUG KERSHAW- "You Don't Want My Love" (Roger Miller cover)
This song was actually written by Roger Miller, but Doug Kershaw does a super job with it.

Mason Proffit: Two Hangmen
Mason Proffit was a very influential band in country-rock-folk circles although they never got much attention from the general public. IMHO The Eagles owe a huge debt of gratitude to this band.

The Ballad Of Buster Scruggs – “Surly Joe” Tim Blake Nelson
No doubt this one is a classic, dating back to 1908:
Little Joe the Wrangler is a classic American cowboy song, written by N. Howard "Jack" Thorp. It appeared on Thorp's 1908 Songs of the Cowboys, which was the first published collection of cowboy songs. Members of the Western Writers of America chose it as one of the Top 100 Western songs of all time.

Ballad of Buster Scruggs - Cool Clear Water
The movie is rather morbid, but it does have some classic cowboy moments along the way.
